Just for wine for the moment at this address - a red Givry premier cru from the walled, monopole vineyard Le Clos Salomon - made without concession to commercial logic by the engaging winemaking duo, Ludovic du Gardin and Fabrice Perrotto. Vine age is high; yields often painfully low. The sometimes fierce materials, reinforced by strong levels of natural grape acidity, may impose lengthy cellarage in unyielding vintages. But it is worth waiting for one of Burgundy`s most original, unspoilt Pinot Noirs, brimming with raw fruit energy. Within the vineyard walls - records of Le Clos Salomon date back to 1375; it has been in Ludovic`s family since 1631 - lie seven hectares, facing east and south, of variable, often steep, slope. Harvesting splits out vineyard blocks according to altitude, ripeness and vine age. Blending occurs at the end of 12 months élevage, using 25-30% new oak. The wine then rests in tank for four months before bottling, generally without fining and filtering. Since 2004 small quantities of white Montagny and white Givry has been added to the domaine’s repertoire.
